Learning unit contents

The anthropological approach to the study of food sees it as a complex phenomenon that is not limited to its physiological components. Eating does not simply mean providing the body with the biological elements it needs to survive; this act actually involves individual and collective food choices (not everything is consumed in an undifferentiated way across cultures, social groups, families, etc.), which are influenced by a number of factors. Eating - as well as sourcing food and cooking - also responds to negotiated norms concerning belonging (chosen or imposed by the context), memories, desires, imagination, conviviality and so on. Starting with this observation, the course presents the main theories of food developed within the anthropological discipline. A series of 'thematic' lessons will then explore from an anthropological perspective the link between food (potentially including all aspects of food, from production to consumption) and - among other things - gender, religion, health and migration. The notions of food security and food sovereignty, as well as sustainability and transition, will also be addressed in order to explore the impact of global policies and issues on access to food and on the practices of individuals and groups, with particular attention to the strategies developed by the latter.

In the second part of the course, students will be supported in carrying out empirical work consisting of an ethnographic approach focused on food and ideally integrated into the Master's thesis fieldwork. This approach will also draw on visual anthropology in the collection and reflective analysis of images and videos.

 

Learning outcomes of the learning unit

At the end of this course, students will be able to identify and apply certain theoretical and methodological tools that enable them to understand food as a complex phenomenon, involving factors and issues that go beyond a purely biological consideration of food issues. The aim is to increase the complexity of the way in which students will be able to relate to these issues in their future professional practice.

A knowledge of written English is necessary for the reading of English texts.

Additional information:

In addition to their active presence in class (5 points - 25%), the students will produce an audio-visual document (5 points - 25%), and a written essay (10 points - 50%) including a summary of the theoretical elements presented in class, by way of introduction, and an analysis of the materials produced during the fieldwork, deepening the themes that emerge through subsequent bibliographical research.
