Learning unit contents

1- General introduction to the food industry.

2- Concepts & classification of the different agri-food sectors.

3- Presentation of the dairy sector (model sector): key numbers, agricultural production-industry relationship, main products and main technologies used.

5 -Based on the "milk" model already presented, group work will be developped aimed at presenting other food sectors such as the following sectors:

- Meat and meat products,

- Eggs and egg products,

- Créales,

- fruits and vegetables,

- etc.


 


 

 

Learning outcomes of the learning unit

At the end of this course, the student will be able to integrate the "food-sector" approach and will be able to make the link between raw materials, technologies and the quality of finished products by having the necessary scientific and technological knowledge.

First cycle courses Mathematics, Physics, Organic and Biological Chemistry

Planned learning activities and teaching methods

The teaching will first cover a complete overview of the different sectors of agri-food industry. Then the milk sector will be presented as a model with a fairly complete description. Finally, and thanks to tutored work, the working groups will produce presentations on other agri-food sectors following a common methodology.
